In Options Trading, What Is the Closest Analogy to a ‘Block’ Being Added to the Chain?

The closest analogy is the 'Settlement' or 'Clearing' process after a trade is executed. A block represents a final, immutable record of transactions.

Similarly, once an options trade is matched, it is sent to a Clearing House for final settlement, where the terms are recorded, and counterparty risk is managed. The completed settlement represents the final, confirmed state of the trade, analogous to a confirmed block on the ledger.
